This recipe uses the Nature Kitchen Greek Seasoning blend ingredients:  thyme, garlic, tomato granules, paprika, black pepper, parsley, onion, salt, and allspice.  to create flavorful, tender chicken skewers inspired by traditional Greek souvlaki. It's perfect for grilling or broiling, served with pita, tzatziki, and a fresh salad. Serves 4; prep time: 15 minutes + 30 minutes marinating; cook time: 10-15 minutes.

Ingredients:

  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 3 tablespoons Nature Kitchen Greek Seasoning (adjust to taste for saltiness)
  • 1/4 cup olive oil
  • Juice of 2 lemons (about 1/4 cup)
  • 2 cloves fresh garlic, minced (optional, for extra garlic kick)
  • 1 red onion, cut into chunks (for skewering)
  • 1 bell pepper (any color), cut into chunks
  • Wooden or metal skewers (soak wooden ones in water for 30 minutes to prevent burning)
  • Optional for serving: Pita bread, tzatziki sauce, chopped tomatoes, cucumbers, and feta cheese

Instructions:

  1. Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, Nature Kitchen Greek Seasoning, and minced garlic (if using). Add the chicken cubes and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
  2. Assemble the Skewers: Thread the marinated chicken pieces onto the skewers, alternating with chunks of red onion and bell pepper for color and added flavor.
  3. Cook the Souvlaki:
    • Grill Method: Preheat your grill to medium-high heat. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature reaches 165°F/74°C) and has nice char marks.
    • Broil Method: Preheat your oven broiler. Place skewers on a foil-lined baking sheet and broil for 8-10 minutes, turning halfway, until done.
  4. Rest and Serve: Let the skewers rest for a few minutes. Serve hot with warm pita, a dollop of tzatziki, and a side salad of tomatoes, cucumbers, and feta. Drizzle with extra lemon juice if desired.

  • Vegetarian Twist: Swap chicken for firm tofu or halloumi cheese cubes for a meat-free version.
  • Make-Ahead: Marinate the chicken overnight for deeper flavor.
  • Pairing Suggestions: This pairs well with a Greek salad (horiatiki) or roasted potatoes seasoned with more of the blend.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently to avoid drying out the chicken.
